Meet one of our Managers, Sam D’Amico of Magnolias on the Bay

1.) Tell us a little about yourself?

S.D: I was raised in Little Italy in Baltimore City and was blessed to have great parents, who taught me the meaning of a work ethic. We owned a restaurant/Import store called D’Amico Italian Imports and I started working with them at the age of 11. This is where I began to learn the in’s and outs of the business. I have worked in every position, from dishwasher to ownership. I have been here at Magnolias on the Bay for one and a half years, previously, the General Manager of Prime Serious Steak for 7 years. I truly love working in the restaurant industry. Just turning 60 on Labor Day and having the support of my wife Susan for the last 23 years and the love of my daughter who makes me proud everyday, makes me a very happy man.

2.) What does a normal day look like for you?

S.D: Upon arriving at the restaurant, I check the messages that were left for reservations and return any phone calls. Then speak to the chefs about the evening specials and desserts for the evening. As the guests arrive, I speak with them to welcome them to Magnolias and ensure they have a wonderful dining experience. Throughout the night, I continue to monitor all facets of the restaurant. Then when  it’s closing time, I do the front of the house checkouts and oversee the closing of the restaurant.

3.) How did you end up at Magnolia’s?

S.D: I was looking for a change in culture and atmosphere and Magnolias on the Bay fit the bill perfectly.

4.) We know Magnolia’s menu changes monthly, could you tell us what the inspiration is behind next month’s?

S.D: Our menu themes are based on the season we are in, our chefs meet each month to create the flavor profiles that will pair the best with each of the proteins on the menu

5.) Is there any dish on the menu that you keep consistently on the menu because it is a best seller? 

S.D: No, we keep most of the proteins but infuse flavors from different cultures each month.

6.) What can you tell me about sushi and why it’s so popular? 

S.D: We are constantly told our sushi has the highest quality ingredients and flavors of any sushi roll they have previously eaten. Our sushi also has many ingredients and with the love and passion our chefs have in creating our sushi rolls sets us apart from any competition.
